The elbows held their shape perfectly even after I accidentally left the pot on a few extra minutes, and that yellow cheddar sauce is genuinely creamy for being chickpea-based. My husband, who's a total skeptic of anything with a health halo, went back for thirds without a single comment about it.
My kids usually complain about “healthy” pasta, but these chickpea elbows fooled everyone at dinner—the yellow cheddar sauce is creamy and rich, and the texture honestly holds up better than regular mac. The whole bowl was gone in ten minutes, which never happens in this house.
The elbows held their shape perfectly in the sauce, which was rich and properly cheesy without being gloopy. I made it for a weeknight dinner and we all ate in total silence until someone finally said they wanted seconds.
