The texture is spot-on for a gluten-free pasta—actually chewy and al dente instead of mushy, and the cheddar sauce coats every shell without turning gummy. I made it for dinner and even my picky kid went back for seconds, which never happens with rice pasta.
The brown rice shells held their shape perfectly and didn’t turn mushy, which is rare for gluten-free pasta. The cheddar flavor is surprisingly rich for a vegan dish, and it’s a solid weeknight comfort meal when I’m craving that classic mac feel.
The sauce was creamier than I expected for a vegan version, and the brown rice shells held up well to a second reheating at work. I'm genuinely impressed with how close it gets to the real thing without any dairy.
