The texture is way better than I expected for a protein pasta—elbows hold onto the cheese sauce without getting mushy. It's a solid weeknight dinner, though the yellow cheddar flavor is a bit milder than the boxed stuff I grew up on.
The chickpea and wheat blend definitely gives this a heartier texture than regular elbows, which I liked, but the cheddar sauce came out a bit thinner than I expected and didn't cling as well. It's a decent quick lunch for the protein bump, though I probably wouldn't pick it over the classic boxed v
