Cooked these for a quick weeknight dinner and the texture genuinely holds up—firm little elbows that don't turn to mush even after a few minutes in the bowl. The white cheddar sauce is rich without being greasy, and for a brown rice pasta it's surprisingly close to the real thing.
The cheese sauce turns out shockingly creamy for a gluten free box, and the brown rice elbows hold their shape without turning to mush in the leftover bowl. My non-GF partner actually went back for seconds, which never happens.
