The elbows held their shape perfectly in the sauce, which was rich and properly cheesy without being gloopy. I made it for a weeknight dinner and we all ate in total silence until someone finally said they wanted seconds.
My kids actually fought over the last spoonful, which never happens with dinner. The chickpea elbows hold the cheddar sauce way better than regular pasta, and the whole bowl was gone in about five minutes.
